My Get Better Soon Soup



Everyone knows garlic is good for you, but did you know that cabbage has healing properties too? I made a yummy soup with lots of nutritious ingredients and cabbage to help our family reclaim our health. Here's the recipe, to the best of my recollection (but it's really just a soup made of whatever left-over veggies are in my fridge):

Cabbage Stew

8 cups of chicken broth
drizzle of olive oil
6 oz. uncooked rice noodles
1/4 head of cabbage
1/2 c. chopped carrots
1 parsnip peeled and cubed
1/2 onion diced
2 cloves minced garlic
1 can stewed tomatoes chopped up
1 Tbs. oregano
2 tsp. basil
salt and pepper to taste
pinch of cayenne pepper

Start by sauteing onions and garlic in a little olive oil until lightly browned. Add broth, vegetables and seasoning and cook until carrots are tender. Throw in the noodles for the last 10 minutes (they'll get softer as they sit.) Season with salt and pepper to taste.
